Pre-made pesto is great or you can make your own vegan pesto. Zoodles are easily made with a simple kitchen device. If you’re avoiding carbs or just want another way to eat zucchini, you’ll be surprised how great of a pasta replacement these make.

Ingredients:

  • 2 large zucchini (wider works best)
  • 1 jar pesto or serving of homemade vegan pesto
  • 1 can cannellini beans
  • 1 avocado
  • Nutritional yeast for serving

To make:

Use zoodler according to instructions and make zucchini noodles. If making your own, make pesto before heating zoodles because they cook fast and will cook in their own heat afterwards. Heat a wok at high temperature and toss in zoodles for a few minutes stirring constantly. Drain any excess water and add pesto & beans. Toss to coat evenly and serve with half an avocado on top.
