Sometimes vegan recipes seem silly because they’re actually so easy. This is one of those silly ones but it’s a great replacement for chips or other fatty or fried snacks. It’s full of flavor so you could happily eat an entire cucumber this way. Plus, this is great for summer when you want something cool, juicy & refreshing.

Ingredients:

1 cucumber, sliced
1-2 wedges of lime
1 bottle of Tajín
Optional: sprig of fresh herbs like cilantro, mint, or basil

To make:

Top cucumbers with a squeeze of lime and a sprinkle of Tajín. If using fresh herbs, just stick a leaf or two on each of the cucumber bites.
