Vegan pesto! What more could you ask for. Great on pasta, sandwiches, and burgers!
- 1 cup fresh basil
- 2 cups fresh arugula
- 4-5 garlic cloves
- 1-2 tablespoons of oil
- 1/4 cup walnuts or pine nuts
- 1 tablespoon nutritional yeast
- 1-2 lemons of juice (or 1 lemon + 1 lime)
For extra silky pesto, add a few spoons of aquafaba or canned bean liquid. For fluffy pesto add spoonfuls of the pasta froth when cooking pasta. A dash of soymilk can also work to add creaminess to it. This size batch should fit in a small bullet blender and serve 2.
Blend all ingredients together until creamy and smooth.
