Tuscan White Bean Cannellini Hummus

This variation of hummus is silky-smooth textured and has a mild, nutty flavor. It goes great with fresh herbs like basil or mint. Serve with a side of crostini and chopped veggies like fennel, celery, zucchini, cucumber, & radishes.

Ingredients

  • 1 can Cannellini beans
  • 1 large lemon, juiced
  • 4-6 cloves garlic
  • 2-3 spoonfuls of tahini
  • 1 spoonful of olive oil
  • handful of fresh herbs like basil, thyme, oregano, dill, or, as pictured– mint!

To make

Drain cannellini bean juice into a separate container and set aside.
Put cannellini beans, lemon juice, garlic, tahini, & olive oil into blender and check the ratio of liquid to solid. The liquids should almost come to the top of the level of the beans. If it doesn’t, add bean juice liquid until it is about 1-2 finger’s width from the top of the beans. If you want more flavor, add lemon or lime juice to that level instead of bean juice (bean juice has less flavor but gives it a fluffier texture, so try it both ways and see what you prefer).
Blend thoroughly, pour in a bowl and top with your favorite chopped herbs & a drizzle of olive oil or tahini.
