I think I just perfected my orange chia pudding recipe!
Ingredients:
– 1/2 cup chia seeds
– 1&1/2 cup soy milk
– 1 very large orange or 2 small ones (I used a giant cara cara, you could even do 3 tangerines)
– 1-2 tablespoons flax
1 tsp vanilla extract, pinch of salt, 2 pinches sugar
Zest the entire orange an set aside
To make:
Juice half the orange and pour it and half the milk in the bowl with the chia seeds making sure they are all coated. Use the rest of the soy milk to blend the other half of the orange, about 1/4 of the zest, the vanilla, salt, sugar and flax seeds. It should be very well blended and frothy. Mix in with the rest of the seeds and milk, it will probably start to set so stir until the lumps are gone (Add more or less milk to adjust the thickness of the pudding) then pour into serving jars. Top each serving with zest. I made this serving larger so these are a whole meal in themselves and around 350 calories.
The flax seems key to making it fluffy like orange whip. The first time I made this I added too much zest so be sure to taste as you go and adjust more or less as needed. I let it sit & chill at least a few hours before eating it for best taste.
